It’s Hatch Chile time, and that means it’s time to roast Hatch chiles! Buy a case (10 pounds or 25 pounds) and have them roasted for you, so you can bring them home and cook with them. Use some immediately and save some in the freezer for later weeks and months, to enjoy Hatch goodness long after their short August-September season is over.
In years past, there were many public roastings for Hatch chiles, but at least in Southern California, many have been canceled for public health concerns, so check with your store to see if they are doing a public roasting. If they are, I highly recommend you take advantage, because they have a super efficient process. They load a whole case at a time into a perforated cylindrical roaster, fire up some blasters, and the cylinder turns while the Hatch tumble inside and get roasted to perfection in about 5 minutes.
Several ways to roast Hatch chiles
If you can’t find a public roasting, it’s easy to roast the Hatch chiles at home ourselves.
1. You can do this stovetop, as we show here.
2. Or you can roast Hatch on the grill outside, as we show here.
3. You can also do it under the broiler in the oven, using the same general directions.
Doing it at home is an easy option, especially if you buy less than a case. Any way you do it, we’ll have loads of Hatch to use.
