On those days when you want a little something special for breakfast, I suggest making baked oatmeal. This version, a Banana Blueberry Baked Oatmeal, is all kinds of warm and satisfying, lightly sweet without being cloying, and easy to throw together in 5 minutes.

I first saw it on the blog The Nifty Foodie, and she saw it on the blog Skinny Taste. Each of us has adapted it to our own needs. I cut some prep steps out to save time and cleanup, and upped the fruit. I also used regular oats (my absolute favorite brand is Silver Palate…so nutty and chewy!).

Cook Time: 35 minutes

Total Time: 1 hour

Yield: Serves 3

Banana Blueberry Baked Oatmeal

BANANA BLUEBERRY BAKED OATMEAL is chock-full of fruit and just this side of sweet -- a warm, comforting breakfast for when you have a few extra minutes, like on the weekend. It's vegetarian, but can be easily vegan-ized.

Ingredients

  • 1 medium size very ripe banana, sliced
  • 1 (6-ounce) container fresh blueberries
  • 1/2 cup milk (can use skim or low-fat, or plant-based milk)
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons agave (or honey)
  • 1/2 cup uncooked regular oats (can use quick-cooking oats) {My all-time favorite brand is Silver Palate}
  • 1/4 teaspoon baking powder
  • Rounded 1/4 teaspoon ground cinnamon
  • Pinch of salt

Directions

  1. Heat oven to 375F degrees. Lightly mist a 9- by 5-inch loaf pan with nonstick spray.
  2. Add sliced bananas in one layer on bottom of prepared dish. Sprinkle with half the blueberries.
  3. In a 4-cup measuring cup, or a mixing bowl, measure the milk and add the egg, vanilla and agave. Whisk to combine. Add oats, baking powder, cinnamon and salt and stir well. Pour mixture over fruit in pan. Sprinkle remaining blueberries on top.
  4. Bake for 35 minutes, uncovered, until the top is a golden brown and the oatmeal is set. Remove from oven and allow to set for 15 minutes.
  5. Serves 3.
  6. LEFTOVERS: Store leftovers in the refrigerator. When serving leftovers, heat in the microwave for 30 seconds to take the chill off. Serve with a splash of milk if you like.

Notes

Substitutions: If you don't have a banana, try some peach slices or apple chunks.

Vegan-friendly: If you want to make this vegan, use an egg substitute, use plant-based milk and choose agave or maple syrup not honey.

This is a perfect breakfast for me. I really want to eat it, like right now. It looks so amazing. And I know it would taste amazing too as it has two of my favorite ingredients – banana and blueberry. I am definitely going to try this.
