Spinach Bites for a Red Carpet Party

Sure, it’s National Margarita Day today, and I made you a MaliBlue Margarita to celebrate, but more importantly, the Academy Awards are on tonight, and the entire Oscar weekend is wacky in crazy-town Los Angeles.

Oscars craziness in Los AngelesI was on a small video shoot this weekend, and horrors, there were no limos to bring us to and from the shooting location. We had to drive ourselves! The indignity of it all…

And don’t even think of going out to dinner! I’m going to hunker down at home with my MaliBlue cocktail and a tray of my latest favorite healthy appetizer — Spinach Bites! Both are perfect for watching bedazzled gowns floating down the red carpet and for parsing acceptance speeches.

Spinach Bites

Prep Time: 10 minutes

Cook Time: 22 minutes

Total Time: 35 minutes

Yield: 24 bites

Serving Size: 2-3 bites each

Brilliant green, fresh and clean tasting, these Spinach Bites get a salty kick from Parmesan and a sweet finish from toasted pine nuts.

Ingredients

  • 10-12 ounces spinach (I used 2 (5-ounce) containers Organicgirl Super Spinach blend)
  • 1/2 cup cottage cheese (drained a bit if watery) or ricotta cheese
  • 1/2 cup shredded Parmesan cheese, plus a bit more for garnish
  • 2 large eggs
  • 1 clove garlic, finely minced
  • 1/4 teaspoon freshly ground pepper
  • 1/4 teaspoon ground nutmeg
  • Garnish: pine nuts

Directions

  1. Heat oven to 400F degrees. Add raw greens to the bowl of a food processor and pulse repeatedly until finely chopped. Transfer to a mixing bowl.
  2. Add cottage cheese, eggs, garlic, pepper and nutmeg to spinach bowl and stir to combine.
  3. Mist a mini muffin pan with nonstick spray and divide the spinach mixture among 24 cups. Cups will be full. Garnish with a pinch of Parm shreds and a couple of pine nuts on each muffin.
  4. Bake the spinach bites until set, about 20-22 minutes. Let stand in the pan for 10 minutes. Loosen the edges gently with a knife and pop them out onto a large plate. Serve warm or at room temperature.
  5. Makes 24 bites.
