Top o’ the mornin’ to ya, lads and laddies!
I’m not so hot on green beer, but I’m enthralled with green mashed potatoes for St. Patrick’s Day. Green food (or shall we say “greens” food?) is good.
Let’s stir in some vivacious green Kale Pesto; you do have some leftover from when we made it earlier this month, right? If not, it’s easy enough to whip up some more. Or use your favorite green pesto of any variety (basil? arugula? spinach?)
And yes please, let’s make the potatoes the easy way!
Recipe: Easy Green Mashed Potatoes for St. Patrick’s Day
Summary: It’s easy to be green if you stir some Kale Pesto into dehydrated Idahoan mashed potatoes. Simple for St. Patrick’s Day!
- 1 (4-ounce) package Idahoan Buttery Homestyle Mashed Potatoes
- 4 tablespoons Kale Pesto
- Prepare mashed potatoes per package instructions (this takes all of 4 minutes). When done, stir in Kale Pesto.
- Voila, serve!

Idahoan mashed potatoes
I love the convenience of Idahoan dehydrated mashed potatoes. They use real Idaho potatoes (crucial!), and a few flavors, and within 5 minutes, you have an easy side dish that tastes like homemade. I was lucky enough to tour their processing plant and got to see the potatoes coming in from the fields, being washed, steamed, rolled and flaked and put into the bags. It is fascinating, and I will share that tour with you another time. For now, trust me, these are good! They have other flavor varieties as well, but for this recipe, I chose the simplest flavor so the green Kale Pesto could shine through.
