Strawberry Lassi: Cool, refreshing and just sweet enough, a fresh strawberry lassi is the beverage you want for breakfast, lunch, after school or camp, or even dessert. It’s the pink chill on a hot day, and is ready with only a quick spin in the blender.
Have you heard of a lassi before? Lassi is a bit like an Indian smoothie. It’s a traditional drink in India, based on tangy yogurt or buttermilk, and can be flavored with all sorts of things – mango, strawberry, rosewater or mint for a sweet version, or toasted cumin, garlic, turmeric and/or ground chili powder for a more savory type. Mace and cardamom are also sometimes included. There can be sweet-ish lassi drinks, and salted lassi.
Today I’m doing an easy strawberry version. I drank one for lunch in July when it was 104 degrees already at noon. But it’s good for any meal or time of the day when you need to cool off with something pretty healthy; you’ll get a probiotic boost from this one.
How to make a Strawberry Lassi
All you need is a blender, some fruit and yogurt, some flavorings or spices, and you’re there.
Gather your ingredients. I have strawberries, Greek yogurt, 2 flavors of extract (strawberry and vanilla) and orange juice here.
Toss everything in the blender.
Blend away. I love this color!

- 10-12 ounces fresh strawberries, stems removed
- 6-8 ounces (1 cup) strawberry-flavored Greek yogurt (you can also use plain Greek yogurt + 1/4 teaspoon Strawberry Extract if you have it. Strawberry extract is optional)
- 1 cup (use the yogurt container) of crushed ice (or ice cubes)
- 1/4 cup orange juice
- 1/4 teaspoon almond extract
- 1/4 teaspoon vanilla extract
- Tiny pinch salt
- 1-2 tablespoons agave syrup (if needed for sweetness)
- Put all ingredients except agave in a blender, put the lid on and blend on high speed until smooth and light pink. Taste and add agave as needed; some strawberries are sweeter than others, so adjust sweetener to your taste. (Also, if you end up using plain unsweetened yogurt, you may find you need more sweetener.) Blend on high to combine.
- Pour into pretty glasses and serve. This looks particularly beautiful and festive in etched, decorated, stemmed or frosted glasses if you want to be fancy.
- Serves 2.
