Recipe: Spring-Break-is-Over Red Things Smoothie

Summary: We enjoyed Spring break, but it is back to the real world for us, with a naturally sweet Red Smoothie in hand to reinvigorate us.

Ingredients

  • Organic Baby Beets from Melissa's Produce on Shockingly Delicious [1]3-4 carrots
  • 2 Melissa’s Produce Organic Baby Beets (already steamed and ready to use)
  • 12 ounces strawberries (this was 6-7 ginormous California strawberries for me)
  • 1 cup red or purple seedless grapes (~28-30 grapes)
  • 1 small tomato
  • 1 red apple
  • Splash of vanilla extract (about 1/2 teaspoon, but no need to measure, just eyeball it)
  • ¼ cup cold water
  • 10-14 ice cubes

Instructions

  1. Wash carrots, cut into chunks and microwave in a covered container for about 2 minutes, until tender. Set aside to cool while you wash and prepare the rest of the ingredients.
  2. To the blender container, add the beets, strawberries (remove the green caps) and grapes. Cut tomato in half (at the equator), and using your finger, scoop out and discard the seed globs. Chop a bit more and add tomato to blender. Cut apple in quarters, core and peel it and add chunks to the blender. Add vanilla extract, water, ice cubes and whirl for 1-2 minutes, until everything is well combined.
  3. Makes about 4 cups. Serves 2.

Blender note

If you are using a blender with super powers, such as a Vitamix, there won’t be any need for you to cut any ingredients, like the tomato, into smaller pieces. If you have a normal blender like I do, a bit of chopping will help the ingredients blend more smoothly. Also, if you use a Vitamix, you wouldn’t have to cook the carrots first.
