Peanut Butter Chocolate Chip Oatmeal Power Bites on Shockingly Delicious [1]Summary: A little bite of tasty, peanut buttery goodness makes a satisfying surfing snack. Great for pre-surfing, soccer, baseball or any time you need a power snack to keep you going.

Ingredients

  • 1/2 cup old fashioned oats
  • 1/4 cup ground flax seed
  • 1/4 cup peanut butter (I used crunchy natural)
  • 2 tablespoons maple syrup
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 3 tablespoons roasted sunflower seeds
  • Optional: shredded coconut

Instructions

  1. Combine all ingredients in a large bowl until well combined. (I used my KitchenAid mixer, but you could do it by hand if you wish). Refrigerate dough for at least 1 hour, or overnight if it is more convenient for you.
  2. When ready to make bites, pinch off small pieces of dough and roll into balls with your hands. Wrap individually or store in an air-tight container in the fridge for up to one week. These also freeze very well.
  3. Makes 20 tiny one-bite balls.

Roll some in shredded coconut if you like, or halve the dough and stir coconut into half and leave the other half without.
