Simple Cheesy Chicken Tortilla Casserole (Secret Recipe Club)

Recipe: Simple Cheesy Chicken Tortilla Casserole

Summary: All the ingredients that might go in a chicken burrito are combined in an easy, comforting casserole.

Ingredients

  • 5 burrito-size flour tortillas
  • 3 cups shredded rotisserie chicken (or roasted chicken)
  • 3 (7-ounce) containers prepared Pico de Gallo (about 3 ½ -4 cups Pico de Gallo)
  • 1 ½ cups (6 ounces) shredded Mexican blend cheese, divided use
  • 1 cup light sour cream
  • 1 cup low-sodium chicken broth
  • 1 teaspoon crushed garlic
  • 1 teaspoon Melissa’s Hatch chile powder
  • Garnish: chopped fresh cilantro (optional)

Instructions

  1. Heat the oven to 350 degrees. Mist a 9- by 13-inch casserole dish with nonstick spray and set aside.Simple Cheesy Chicken Tortilla Casserole | www.ShockinglyDelicious.com [1]
  2. Stack all 5 tortillas on top of each other. Roll the tortillas like a cigar and slice them into strips, about 1/4 – 1/2 inch wide.
  3. Place tortilla strips in a large mixing bowl. Add chicken, Pico de Gallo and 1 cup of the shredded cheese and stir to mix.
  4. In a 4-cup measuring cup, add 1 cup of sour cream. Add chicken broth up to the 2-cup mark, add garlic and chile powder, and stir well to combine. Pour mixture into the bowl with the chicken and tortillas, and stir to mix well.Simple Cheesy Chicken Tortilla Casserole | www.ShockinglyDelicious.com [2]
  5. Spoon mixture into the prepared baking dish. Sprinkle the rest of the cheese on top (it should be 1/2 cup of cheese remaining).
  6. Bake, uncovered, for 45 minutes. The cheese will be melted and starting to brown, and the casserole will be hot and bubbling.
  7. Serves 8.
