Let me describe this healthy, delicious lunch or dinner bowl to you using flavors and textures:

Crispy polenta, warm, fragrant vegetables, sweet tomatoes, salty Mexican cheese, herbaceous basil sauce…can you taste it? Are you sold yet? Did you just go to the kitchen to get a fork?

A better-for-you vegetarian bowl starring roasted veggies and some of my beloved cheese can be the answer to a Meatless Monday or any day you want a satisfying meal that isn’t the same old, same old.

Panela Polenta Vegetable Bow is great. This is so creative and looks totally delicious. I like that it’s specific for vegetarians.I’m always looking for new vegetarian recipes, and this recipe looks filling and delish. Thanks for posting.

I really like seeing recipes that are specific for vegetarians. Your recipes is so amazing and I love Cacique! It is one of my favorite cheeses to use in any recipe.

I love how colorful and creative this salad looks. I’ve never been a fan of polenta, but crispy begins to sound enticing. Pairing it with a cheese I’m not familiar with makes me even more curious. Pinned!

You might want to try that cheese. I have found it extremely versatile! And yes, crisping up the polenta changes the character a LOT! So if you don’t like the soft kind, crisp it.
