In these days of cupcake food bloggers and websites dedicated to fantastic layered cakes decorated to the hilt, a girl can feel left out.
I’m not so much a cute decorated food person as I am a person who gets a delicious, healthy meal on the table every single night.
But sometimes, oh sometimes, in my dreams, I long to make cute food that people swoon over. Swirled icing, sweet things on sticks, rainbow-colored this and thats – it’s all vivid in my imagination.
So how fortuitous to find the blog Life and Kitchen, where right there, on the screen, I found a sweet thing on a stick that even I could make! Lindsay’s Marshmallow Pops looked easier than pie, and just in time for Halloween, too.
These are going to get me some mommy points!
A couple of her other recipes whispered in my ear — pie girl that I am, her Warm Buttermilk Custard Apple Pie jumped into my printer and will probably make it to Thanksgiving dinner, her Black Bean Patties with Avocado Cream looks like a Meatless Monday dinner very soon, and her Pineapple Pie Squares look gooey and wonderful. I need to stay away from those, I can tell.
But I was focused on her decorated marshmallows, because hey, you can let your freak flag fly with each individual mallow.
Maybe some Halloween hair colors?
Maybe some hints o’ Frankenstein?
Maybe some crazy colored hair?
These would be great for a classroom party because they don’t take too long to make but they make a big impression, or a neighborhood party if you are throwing one or invited to one.

Recipe: Monster Marshmallows
Summary: Marshmallows on a stick become Halloween monster heads with a little chocolate and some sprinkles — easy to do and they make a big impression!
Ingredients
- 12 large marshmallows (not the mini marshmallows)
- 12 paper straws or lollipop sticks
- 1/2 cup semi-sweet chocolate chips
- Sprinkles (or other crumbled toppings)
- Candy eyeballs
Instructions
- Ease the straws into the marshmallows without piercing through the end.
- Place the chocolate chips in a small glass bowl and microwave them until melted, about 30-50 seconds, stopping to stir several times so you can gauge whether they are melted. (Chocolate chips will hold their shape even when melted, unless you stir.)
- Using a small offset spatula or a spoon, dip and spread the chocolate over the mallow, covering the sides and top with a thin layer of chocolate. Immediately apply eyes and any sprinkles, and set the marshmallow on straw, marshmallow head up, in a tall glass. As soon as you have done 4 or so, place the glass carefully in the refrigerator for 30 minutes or so, so the coating can harden, and continue working on the rest. Repeat by putting the second glass of monster heads in the refrigerator to harden. Once they have hardened, they can be removed and kept at room temperature until served.
- Makes 12 Monster Marshmallows.

Oh, another fun Halloween post–love the coordinating straws! If my kids were little again, we’d be making these tomorrow night for sure.
