It’s Hatch Chile season again, my food friends, and you’d best get them while the gettin’ is good. The season runs from August through September, and then we wait another year for them.

Hatch, as you may know, grow only in the Hatch Valley of New Mexico, which stretches north and south along the Rio Grande from Arrey, New Mexico in the north to Tonuco Mountain to the southeast of Hatch, New Mexico. They are prized for their excellent flavor.

They’re also one of the only chilies to come in four heat levels — mild, medium, hot and extra hot, so you can choose the level you prefer.

Over the past years, I’ve written about Hatch many times, but I have to say one of my best new ideas this year is simple and sweet: top grilled lamb chops with Hatch Chile Marmalade! A little sweet, a little zippy, and a lotta flavor!

How to make Hatch Chile Marmalade

The recipe is ridiculously simple.

(1) your favorite jarred marmalade (ours is Maman brand orange marmalade, but I also like Stonewall Kitchen tangerine marmalade; both are available at grocery stores).
(2) roasted, peeled, seeded Hatch chiles, chopped.

Suit yourself…it just depends on whether you like to gnaw bones. Simple steamed rice and some backyard cherry tomatoes completed the meal.

It was sublime!

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: Serves 2

Hatch Chile Marmalade

Hatch Chile Marmalade is a 2-ingredient topping for grilled lamb chops, pork chops, chicken or even beef -- a little sweet, a little zippy, and a lot of flavor!

Ingredients

  • 2 tablespoons orange marmalade (more or less, to taste)
  • 1 large Hatch chile, roasted, peeled, seeded and stemmed
  • .
  • For serving: 2 grilled lamb chops

Directions

  1. Put the marmalade into a small bowl.
  2. Chop the roasted chile into a small dice, and stir into the marmalade.
  3. Serve on top of grilled lamb chops!
  4. Serves 2.
