Top o’ the mornin’ to ya, lads and laddies!

I’m not so hot on green beer, but I’m enthralled with green mashed potatoes for St. Patrick’s Day. Green food (or shall we say “greens” food?)  is good.

Let’s stir in some vivacious green Kale Pesto; you do have some leftover from when we made it earlier this month, right? If not, it’s easy enough to whip up some more. Or use your favorite green pesto of any variety (basil? arugula? spinach?)

And yes please, let’s make the potatoes the easy way!

Recipe: Easy Green Mashed Potatoes for St. Patrick’s Day

Green Mashed Potatoes on Shockingly DeliciousSummary: It’s easy to be green if you stir some Kale Pesto into dehydrated Idahoan mashed potatoes. Simple for St. Patrick’s Day!

Ingredients

  • 1 (4-ounce) package Idahoan Buttery Homestyle Mashed Potatoes
  • 4 tablespoons Kale Pesto

Instructions

  1. Prepare mashed potatoes per package instructions (this takes all of 4 minutes). When done, stir in Kale Pesto.
  2. Voila, serve!
  3. Serves 4.

Idahoan mashed potatoes

Idahoan Buttery Homestyle Mashed PotatoesI love the convenience of Idahoan dehydrated mashed potatoes. They use real Idaho potatoes (crucial!), and a few flavors, and within 5 minutes, you have an easy side dish that tastes like homemade. I was lucky enough to tour their processing plant and got to see the potatoes coming in from the fields, being washed, steamed, rolled and flaked and put into the bags. It is fascinating, and I will share that tour with you another time. For now, trust me, these are good! They have other flavor varieties as well, but for this recipe, I chose the simplest flavor so the green Kale Pesto could shine through.

Cooking time: 4 minutes

Kale pesto mashed potato looks really interesting! I’m just not sure about buying the ready-made mashed potato so we’ll stick with homemade and stirring in some kale in there! (I’m in Canada and I’ve never seen the brand you mentioned.)

Happy St. Patrick’s Day! This mashed potatoes sound convenient to me, but the best trick here is the kale pesto. It gives such a lovely green colour and definitely must affect positively the potato’s flavor. Thumbs up for the pesto!

Nancy,
I would have said the same thing until 5 years or so ago. Dehydrated potatoes today are NOT the same glue from your youth! They have perfected the process to allow better texture and flavor, and the Idahoan brand is very good! Try it! You can also do this with whole potatoes…just make your own mashed potatoes and stir in the pesto. It’s good either way.

Have never thought of stirring pesto into mashed potatoes (hitting my head with my head – duh!!) Will definitely give it a go with my next batch of mashed potatoes! And the Idahoan instant are good – used in my vegetarian nutrition class!!
