I don’t drink hot coffee, so the allure of the bitter beverage is a mystery to me, but if there were a coffee club, he would join and want to be president.

So for Father’s Day, I will make him these very delicious Coffee Blondies. They’re rich and chewy, almost fudgy, with a prominent coffee flavor, and a few tiny chocolate bits to add interest. They’re a little naughty and a lot delicious, and so easy that even beginning bakers can have success with this easy recipe.

These bar cookies are for the coffee-craving family and friends in your life. Or even those who might think they don’t like coffee. I actually love them, too. Maybe I just need some sugar in my coffee to convert me!

Coffee Blondies

Prep Time: 25 minutes

Cook Time: 25 minutes

Total Time: 1 hour

Yield: Makes 20 bars (or 12 bars if you want to indulge)

Coffee Blondies

Coffee Blondies -- rich, chewy, almost fudgy, with a prominent coffee flavor and a few tiny chocolate bits to add interest-- will make coffee lovers swoon.

Ingredients

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter
  • 2 1/2 cups dark brown sugar
  • 2 tablespoons instant coffee powder
  • 1 tablespoon hot water
  • 2 eggs
  • 2 tablespoons vanilla extract (yes, tablespoons!)
  • 3/4 cup semisweet mini chocolate bits

Directions

  1. Heat oven to 350 degrees. Grease an 8-inch square baking pan with non-stick spray, and then line the bottom with parchment. Set pan aside.
  2. In a mixing bowl, stir together the flour, baking powder and salt. Set aside.
  3. In a saucepan on the stove, melt butter and brown sugar together. In a small dish or cup, dissolve the coffee powder in the hot water and then stir it into the butter mixture. Remove saucepan from heat and let mixture cool to room temperature. When cooled, beat in the eggs and vanilla with a hand mixer. (If you add the eggs while the mixture is hot, you risk scrambling the eggs!)
  4. Pour this over the flour mixture and mix until just blended. Stir in chocolate bits. Pour batter into prepared pan and bake for about 25 minutes. Do not over bake. Remove from oven and cool. Cut into squares when completely cooled.
  5. Makes 20 bars (or 12 bars if you want to indulge).
